Freshness & Packaging Guidance for Cauliflower

For cauliflower, the packaging plan should account for yellowing, moisture loss and freshness during distribution. Results can vary with variety, maturity, pack weight, temperature, humidity, pre-cooling, handling and journey duration.

Post-Harvest Physiological Challenges in Fresh Cauliflower

Cauliflower (*Brassica oleracea* var. *botrytis*) curds are highly sensitive to ethylene gas and moisture loss. Primary post-harvest degradation mechanisms include:

  • Curd Browning & Discoloration: Light exposure and ethylene gas acceleration turning bright white curds brown or dull yellow.
  • Floret Softening & Off-Odor Build-up: Enzymatic breakdown under poor gas permeability causing sulfurous off-odors and soft curd rot.
  • Wrapper Leaf Wilting: Transpiration causing green jacket leaves to wither and drop off.

Recommended Cold-Chain & Storage Protocol

Parameter Recommended Export Value VAMSA Technical Impact
Storage & Transit Temp 0.0°C to 2.0°C (32°F – 35°F) Retards curd respiration and prevents curd browning
Relative Humidity (RH) 90% – 95% Preserves curd turgidity and leaf crispness
Target $O_2 / CO_2$ Balance 3% – 5% $O_2$ / 5% – 7% $CO_2$ Prevents curd yellowing & eliminates anaerobic sulfur off-odors
Liner Specification VAMSA Fresh Keeper Grade FK-STD (24 × 36 in, 25µm) Active Silver Nano ethylene conversion + anti-fog condensation barrier
Max Export Transit Duration 25 – 35 Days Enables ocean container export and extended cold storage

Empirical Trial Comparison: Control vs VAMSA Fresh Keeper

Metrics (25 Days Storage @ 1.0°C) Control Box (Unlined) VAMSA Fresh Keeper Liner
Curd Whiteness & Visual Grade Dull Yellow & Brown Spots Bright Snow White & Firm
Weight Loss (%) 6.5% Net Weight Loss 0.9% Net Weight Loss (-86%)
Off-Odor Score (1-5) 3.5 (Noticeable Off-Odor) 1.0 (Fresh Natural Scent)
Floret Rot Incidence (%) 14.8% Affected Curds < 0.8% Affected Curds

Packhouse Standard Operating Procedure (SOP)

  1. Field Trimming: Trim heads leaving 4–6 green protective jacket leaves around the white curd.
  2. Pre-Cooling: Hydro-cool or room-cool cauliflower down to 1.0°C pulp temperature.
  3. Liner Insertion: Place VAMSA Fresh Keeper liner in 10kg or 15kg export corrugated boxes.
  4. Air Expulsion & Twist-Tie: Expel excess air gently, twist top liner, and tie securely.
  5. Refrigerated Transport: Maintain strict 0°C to 1°C setpoint inside container.
